ash herb mix
Persian herb blend for thick soups (ash), usually parsley, coriander, dill, spring onion or chive greens and often spinach, sold fresh-chopped or dried.
This is a Persian combination of green herbs for ash, the thick soups built on pulses, noodles or grains. It typically contains parsley, coriander, dill and allium greens such as chives or spring onion, often with spinach added. It has nothing to do with the carrot, celery and leek bundle sold as soup greens. The taste is fresh, grassy and deeply green, and it is used in large quantities, so it colours the soup and gives it body rather than merely seasoning it. Dried, it is available in Persian and Turkish grocery shops or by mail order, and sometimes frozen and pre-chopped.
Substitute:
The blend is easy to assemble yourself from fresh parsley, coriander, dill, chives or spring onion greens and some spinach, finely chopped in roughly equal parts. The result is brighter and fresher than the dried product. As a rough rule, use about three to four times the volume of fresh herbs in place of the dried mix.
