lavash bread
A very thin, soft wheat flatbread served at the table and used to wrap kebab, herbs and cheese.
Lavash is sold in Persian, Armenian, Turkish and Middle Eastern grocers and increasingly in larger supermarkets, either fresh or packaged. It dries out and turns brittle quickly, so keep it well wrapped and revive dry sheets with a sprinkle of water and brief warming.
Substitute:
Other thin flatbreads such as saj or markook bread come closest. Thin wheat tortillas work for wrapping but are thicker and chewier. Yufka sheets are raw dough and do not work as a substitute.
