Dried petals of the Damask rose, fragrant and slightly tart.
Dried rose petals are sold in Persian, Turkish and Middle Eastern grocers, by spice and tea merchants, and by mail order. Look for strongly scented, food-grade petals of the Damask rose.
Substitute:
A few drops of rose water give the scent, but neither the colour nor the petals as a visible ingredient. Use rose water sparingly, or it quickly tastes soapy.
