fava beans
Large, flat legumes with pale green seeds, nutty and slightly bitter; usually eaten with the tough seed skin removed.
Fava beans are sold frozen in many supermarkets, fresh in the pod at markets in early summer, and dried or ready-peeled in Turkish or Middle Eastern grocers. After a brief blanch, the pale outer skin slips off each bean, which makes the flavour milder and the texture more tender.
Substitute:
Edamame or green lima beans match the colour and bite fairly well, but lack the slightly bitter, grassy note of fava beans.
